tHE BEST EVER CHIPOTLE CHICKEN BOWL

This is seriously one of the most delicious dishes I have ever made! The combination of flavors is perfection. I dressed it with a copycat version of Chipotle’s salad dressing and I can’t wait to have it again.

Ingredients for the Bowl:

  • Chicken Tenderloins

  • 1 pack taco seasoning ( I used siete)

  • Guacamole (homemade or store bought)

  • Romaine lettuce (chopped)

  • Fire Roasted Corn

  • Pico De Gallo

  • Rice

  • Black beans

  • Cilantro

Ingredients for the Chipotle Honey Dressing (adapted from once upon a chef)

  • 1/3 cup apple cider vinegar

  • 3 tablespoons honey 

  • ¾ cup avocado oil 

  • ½ teaspoon dried oregano

  • 1½ teaspoons salt

  • ½ teaspoon ground black pepper

  • 2 chipotle peppers in adobo sauce

  • 2 small garlic cloves

Directions:

Season the chicken with the taco seasoning and some olive or avocado oil and grill In a pan. Combine all of the ingredients for the dressing in a small food processor, and blend until smooth. Adjust to your taste.

Once the chicken is cooked, cut it up in cubes, and start to create your bowls. I did romaine at the bottom, rice, beans, corn, pico, guac, drizzled the dressing on top and of course topped with extra fresh cilantro. Perfection!
